Coolea Irish Cheddar Cheese

Pair with Clif Family 2006 Zinfandel



Although big and bold, Zinfandel requires a mild cheese.   Stong cheese such as a blue brings out any bitter component a Zin may have.  But a nutty semi-hard cheese such as this Coolea Irish Cheddar bring out the best in Zinfandel.  We found this to be especially true with Clif Family's 2006 Zinfandel.

Montagnolo Cheese

pair with Smith-Madrone Riesling

We paired Smith-Madrones delicious Riesling with a triple cream bavarain cheese called Montagnolo.  However, we felt that the Riesling's fruit and spice required that our cheese course have a little something extra so we added a ginger snap and fresh sliced pairs to the plate.  Enjoy!


Fiorito di Ciliegie with Blackberries

Pair with 2007 Buoncristiani Dolcetto

 

 

This young goat cheese from Basilicata, Italy, carries just the right punch to go with the Buoncristiani Dolcetto.  The rind is firm fading to a creamy center.  We were able to get our hands on the "fiorito" version which is wrapped in cherry leaves.  We served ours with blackberries to bring out the fruit of the Dolcetto.

 



Murica Curado
Pair with 2006 Judd's Hill Petit Syrah

The region of Murcia, in southeastern Spain, is the birthplace of the Murciano-Granadina, the best milk producing goat breed in the country. It is a rustic animal, well acclimatized to the heat and aridness of the Mediterranean region, but with centuries of genetic selection for milk production. Its attributes include a stylized anatomy, a fine mahogany to dark-colored coat, great migrating abilities to take advantage of good grazing lands and a perfect milk producing shape consisting of large, well-implanted udders.

The Murcian goat has a very high productivity, as many herds with just one milking session per day and one delivery per year, produce more than 600kg of milk per lactation, with mean values of 5.4% fat, 3.6% of protein and 14.5% of dry matter, which means an excellent cheese making yeild.

Murcia has two Denominations of Origin from pure Murcian Goat (order July/11/2001, BORM July/11/2001): Queso Murcia includes “Queso de Murcia fresco” (fresh Murcian cheese) and the “ Queso de Murcia curado” (Aged Murcian cheese).
