Aged Mahon

Mahon comes from the Spanish Island of Minoroca. Mahon is a thick, square cheese with rounded edges. As it ages, the cheese is rubbed with butter or olive oil to seal the rind. Sometimes it is also rubbed with paprika to enhance the appearance.
Mahon can be aged from one month to one year. A young Mahon is pale in color and semi soft. Its delicate flavors pair better with white wines. However, as it ages the interior becomes golden and firm, the flavors intensify with nut and carmel notes, making it a great wine to pair with Merlot.
