Aged Gouda is much more complex then its younger cousin. It is best if aged at leat 24 months. It is sweet and nutty with a hint of smokiness. Pairs perfect with Syrah as well as Bordeaux wines.

Mimolette
Pasteurized cow's milk, France
With it's bright orange color and moonscapelike rind, mimolette is easy to spot in any cheese case. This cheese is aged anywhere from 3-24 months. It becomes drier, saltier, more piquant, and more brittle as it ages. This unique cheese pairs well with Syrah as well as whites such as Chardonnay.
