Fiorito di Ciliegie with Blackberries

Pair with 2007 Buoncristiani Dolcetto

 

 

This young goat cheese from Basilicata, Italy, carries just the right punch to go with the Buoncristiani Dolcetto.  The rind is firm fading to a creamy center.  We were able to get our hands on the "fiorito" version which is wrapped in cherry leaves.  We served ours with blackberries to bring out the fruit of the Dolcetto.
